Disclaimer: I don’t use News+. This is just what I think I remember for on some podcast episode a while ago.
IIrc: it only does this for the Top Stories feed which is a handful of stories handpicked by Apple. It would be weird if your Top Stories was super short or completely blank because you happened to block all the right sources. Your regular feed should be filtered.
Once an account is set up on a switch your kids will not need to remember password to access it. From what I recall the only time you might have to recall the password is to add funds to the account to buy games on the shop.
There is a companion parental control app that allows you limit screen time or access hours and filter games by age rating. You’ll still have full access to the console through a quick passcode.

This reminds me of a story I read once about some airline that was well regarded for its adept mechanic/technician workforce. They would have sassy inspection notes like
Pilot: Front left tire almost needs replacing
Mechanic: Almost replaced front left tire.

And It has the largest navigable international border in the US,
And the Great Lakes feed into the ocean through the St Lawrence Seaway, And millions of tonnes of cargo pass through the Great Lakes each year on oceangoing vessels.
But it technically does not have a border touching the ocean. That means it’s landlocked.
